There are vitamins in maple sap; some even remain in maple syrup (those not destroyed by heat).
In your article, I guess they're hidden under "Other organic acids".
Anyways, I mentioned nutrients by and large; it's not only about vitamins.
This article also seems to show that the amino acids and protein in maple sap are not present in the syrup anymore.

Anything cooked that strong and that long cannot be called raw... actually, the general acceptation is that something is no longer raw when heated above 105°F (40.5°C).

The thing is, it is strongly heated, and for a long time, which makes it not raw at all.
Most nutrients (especially vitamins) are destroyed in the process.
Minerals remain, though.

Likewise, pasteurized products are maybe not cooked, but not raw either, for the same reason.

I eat almost anything :) I prefer raw+vegan+organic most of the time, but I sometimes eat meat and even a little junk here and there (no KFC or McDonald's, still).
I use raw nori, though. Toasted nori also had seafood in it.
Rice paper is slightly steamed for a few seconds, I agree.
Maple syrup, though, is really hard boiled for a long time :) but it's local and so good!

Raw, vegan & organic Sugar Pie:
- crust = crushed Pecan nuts with garam masala spices (cinnamon, cardamon, ginger, cloves, nutmeg, mace, long pepper, salt), shredded coconut and a little date paste (just water and dates).
- inside = a mixture of coconut oil, coconut butter, crushed Brazil nuts, vanilla, date paste and lots of maple syrup.
- topping = shredded coconut, pecan nuts halves and crushed pecan nuts.

Raw, vegan & organic rolls:
- spring rolls = rice paper sheet, sesame seeds and nori sheet enclosing paper-thin minced vegetables (lettuce, red onions, red bell pepper, cucumber) with "tapenade" (mixture of sunflower seeds, kalamata olives, garlic, red onion, sunflower oil, balsamic vinegar, lemon juice, oregano, parsley).
- zucchini rolls = minced zucchinis enclosing red bell pepper, parsley and "ricotta" (a mixture of macadamia nuts, lemon juice, garlic, salt & pepper).

Raw, vegan & organic creamy apple bouchées:
- "toast" = apple slices.
- layering = cream of avocados, lemon juice, coconut butter, agave nectar and liquid vanilla extract.
- topping = hemp seeds and lemon rind.

These are very different things to me... although this Fantômas album is more cartoonish than the others, with more samples, I'd say it's still far from electro-based music (such as in the above list).
