so I had bacon and eggs and cheese... but I didnt feel like making pasta for carbonara... I felt like having a sandwich but not a grilled cheese... I wanted a carbonara sandwich...

here how this was accomplished:

-Take three slices of bacon, slice em up into lardons (obviously if you've got pancetta on hand, go fucking nuts). I added a bit of chopped red onions (although that's not really part of a classical carbonara recipe) Use part of your pan to get your bread warm and lubricate it with a bit of bacon fat. Get rid of whatever leftover fat you've got in the pan and set your bread aside.

-Once the bacon has reached desired cooking, deglaze with whatever you have on hand (this would typically be the cooking water from the pasta). I went with white whine but chicken or vegetable stock would do the trick... once again go nuts. Reduce to half, and add two dollops of cream cheese. Wait till it has completely melted. You now want to get to a consistency that would be close to sauce covered bacon.

-Once your sauce is nice and thick, get the pan out of the fire. Crack an egg in a bowl and beat it (if you have any Parmesan on hand, add some). Once your bacon mixture has stopped bubbling, add your egg and mix it in. Put the pan back on the stove on medium low heat. You want to reach a consistency of proper scrambled eggs. DO NOT OVERCOOK! Keep stirring... think hollandaise but a bit thicker, you do NOT want the egg to coagulate at this point. Add any flavoring, chives, paprika, bit of salt, bit of pepper... whatever you feel like really.

-Once you reach a consistency just thick enough to put on bread and it not becoming sogy, do so. Than put the bread back in the pan on max heat to give it a nice crisp.

-eat

Feel free to go nuts at any point... add veggies or garlic or whatever. Stuff a crêpe with the mixture instead of using bread... Try different cheeses... boursin might be great.

Bacon Vodka

Makes up one pint

* Fry up three strips of bacon
* Add cooked bacon to a clean pint sized mason jar. Trim the ends of the bacon if they are too tall to fit in the jar. Or you could go hog wild and just pile in a bunch of fried up bacon scraps.
* Optional: add crushed black peppercorns.
* Fill the jar up with vodka. Cap and place in a dark cupboard for at least three weeks.(No need to refrigerate)
* At the end of the three week resting period, place the bacon vodka in the freezer to solidify the fats. Strain out the fats through a coffee filter to yield a clear filtered pale yellow bacon vodka.
* Decant into decorative bottles and enjoy.
