any fool can through iceberg lettuce and cherry tomatoes together then slap kraft ranch dressing on it
i'm talking about those wicked salads with all kinds of funky shit... like the other day someone did salad with Boston lettuce endives, avocado and a blue cheese dressing topped with grilled red peppers and sesame seeds i want to make better salads...telling me something would help if you know it, even if it's just how to make a good dressing...

There's a salad they have/had on the menu at L'Avenue that was fucking amazing.. I think they used two or three different kinds of lettuce, baby spinach, actual tiny chopped up pieces of bacon, three different cheeses on it (one of the three was feta, and I think there was mozzarella in there too), and raisins, apple bits and pieces of orange. don't remember what the dressing was.. but it was fucking awesome!

Aaaaah I feel bad already!
Here are a few ideas that work pretty well: - hashed roman lettuce with roquefort (or the strongest blue cheese you can find), grapefruit, walnuts, apples, topped with a vinaigrette made of dijon mustard, balsamic vinegar and a mixture of olive and walnut oil - oak/red leaf lettuce with minced bacon/lard and garlic croutons, topped with the above vinaigrette mixed with maple syrup - arugula mixed with hand-torn smoked salmon bits and hemp seeds, topped with a mixture of lime and black pepper - shrimps, avocado dice and boiled corn kernels, with a splash of light lemon-flavored mayonnaise on the side, all topped with chopped parsley and served on nice big lettuce leaves You may add pine nuts in any of the above recipes. That's as far as my guilty imagination is willing to go for now :)

avocado and shrimp salad is also good with asian sesame vinaigrette (Renee's salad dressings are very tasty)
I like to replace lettuce with baby spinach

baby spinach, sliced apples, crushed walnuts (or pecans) + home-made vinaigrette (apple cider vinegar, olive oil, honey, cayenne pepper)
not particularly fancy - but it's pretty damn good... might be interesting with arugula, which could combine nicely with the cayenne in the dressing.
